Now that the Husband and I are trying to get back on track on a healthier meal plan, we've been doing 6 meals a day. Well 3 meal and 3 between-meals-snacks. So I have to make breakfast, pack his snacks and lunches before he gets out the door. So I have been fiddling around some more easy to make recipes that I could whip up as quick as possible during the time he is having his breakfast.
Made this yummy Pita sandwich for the Husband and I. He's not a fan of Guacamole but he says this is good. It has a nice added element with the tuna.
Also the pita pockets make handling and eating it a lot easier than regular sandwich bread. A big plus in our book, considering that he works a lot with his hands and they get dirty. You'd want something that you could wrap up in cling film or some wax paper, then just push it out of the wrapper. This one makes it simpler. I love stuffing pitas with BLTs too, so gave this one a try.
- 1 can Tuna in light oil
- 2/3 cup Guacamole (I used mild)
- 1/4 cup chopped tomatoes
- 1 teaspoon lime juice
- 1 tablespoon light mayo
- 1 tablespoon ground Flaxseed
- 2 whole wheat Pita breads
- Mix in all the ingredients except for the Pita. Depending on how chunky you want it, mix it as fine as preferred.
- Cut the Pita in half and spoon the mix into the pockets.
